Spiced Lentils with Rice


Easy Vegan dinner full of veggies, nutrients and fiber with good protein content.

Calories: 600 cal
Protein: 35 grams
Fiber: 40 grams

Ingredients (Two Servings)

1 cup dried whole lentils
2-2 1/2 cups broth of your choice
2 cloves garlic, chopped
3/4 teaspoon cumin powder
1/2 teaspoon turmeric
1/2 teaspoon basil
1 cup tomato, chopped
1 small white onion, chopped
2 carrots, diced
1/3 cup green peppers, chopped
1/3 cup red peppers, chopped
2 celery sticks, diced
1 tablespoon olive oil
1 1/2 tablespoons fresh lemon juice
1 cup of basmati rice
Salt and pepper to taste


Add one cup of lentils (soaked in water for 1-2 hours), 3 cups of water mixed with broth, all the veggies listed above in a slow cooker or a crock pot. It will take 4 to 6 hours on high heat depending on how cooked you like your lentils. When they are cooked half way through (that is after 2 to 3 hours, add rest of the spices listed above with one teaspoon of olive oil). once cooked, stir in one tsp of lemon juice.

One cup of basmati rice with 1.5 or two times water based on how you like your rice with salt to taste.

Serve lentils hot on the bed of basmati rice.
